So today I discovered a new love in life... It's name is Oriental Chicken Salad from Applebees! Holy yum!! :]
Life is good... My school semester starts this week, which I'm actually pretty excited about. I'm taking American Government, Personal Economics, A Language Arts, & Psychology. Should be pretty fun, especially psychology & government. I'm taking them all online this semester so that I can be there for the birth of my sister's baby at the end of April. That way I can stay there for a few weeks, get my work done while I'm there, and not have to worry about missing anything.
I really need to get into the habit of cooking again! That is going to be my goal for next week- cook at least 5 of the days of the week. I have a few weight watcher cookbooks that I really like, but I could definitely still use some more ideas.

I have a huge amount of respect for you, going to school. I don't think I could ever do it again. I have done it and even then it was a drama! Lol! Took me 7 years to get my degree! By that I had been teaching for 3 years!
Healthy recipes.....oh dear. Rice with vegetables from a wok with a nice sauce.
Pasta salads, I particularly love. With lettuce, red pepper, chicken, some sort of fruit...anything really! Hot or cold. During the summer I love them cold with some dark bread.

Turkey chili is one of my easy go-to healthy recipes. Brown turkey, throw in chopped onion and green pepper and a can of pinto beans, add a big can of diced tomatoes (not drained) and let simmer for 15 minutes. Add your own spices of course. Super easy, cheap and YUM!
ReplyDeleteI just posted a salad on my blog that is my new fav - Spinach with tuna salad, strawberries and almonds! So YUMMY! I would have never thought that tuna and strawberries would taste good together, but they do!!!
